Sweet Potato Pumpkin Ombre Layered Smoothie

Happy Halloween, friends!! I'm enjoying the morning with these Sweet Potato Pumpkin Ombre Layered Smoothies. They sort of look like candy corn! I bet you never thought about adding sweet potatoes to your smoothie, right? You can slurp this smoothie down for breakfast or dessert or anytime. They are filled with tons of nutrients and delicious flavor.

What You'll Need

1/2 cup medium sweet potatoes, peeled, boiled and mashed (then chilled)
1/2 cup pumpkin puree
1 1/2 cups cold unsweetened coconut milk
2 teaspoons vanilla extract
1 teaspoon cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cardamom
1 tablespoon coconut cream fat
1 scoop protein (I used @PerfectFit vanilla)
4 ice cubes

Toppings:
coconut shavings
bee pollen

What You'll Need To Know

1. Blend all ingredients, except coconut cream fat and reserving 1/2 cups coconut milk. Fill glasses about 1/3 of the way. place cup in freezer for 5 minutes for the top layer to harden.

2. For the second layer, add 1/4 cup coconut milk and 1/2 tablespoon of coconut cream fat to the blender and blend and pour about 1/3, and return back to the freezer for 5 more minutes.

3. For the third layer add the rest of the coconut milk and coconut cream fat and blend.

4. For the top layer and sprinkle with coconut shavings and bee pollen.

Recipe makes 2 servings.
